Extremely filling dish. I kept thinking about how you mentioned that it was not an every day dish, and I absolutely agree with you. Its a bit expensive with all the cheese and bit of beer and a bit complicated to make. Worth it, but particularly worth it for special occasions. Perfect soup for dipping your bread into!

Oh yes! For whipping cream! It would definitely get a workout in our kitchen for that task. I have been known to request homemade cocoa with real whipped cream from my husband with some frequency in the winter.

Made this for dinner tonight. Subbed out some cheddar for pepper jack and added a few shakes of Chipotle Tobasco and served with homemade pretzel rolls. Super Yummy! But I did make a huge mess filling my blender too full and turning it on. That immersion blender would have been handy!
