Oh lord, I love enchiladas. I have a theory that you could coat anything in enchilada sauce and cheese and it would taste good. So far I've only tried it with squash, but they were still awesome.

I don't make my own enchilada sauce, though. I have to draw the line somewhere.

Butter flavored tortillas?! That is truly horrifying! Even my son (who is a butter fiend and has a flour tortilla with butter and cinnamon sugar every day for snack after school) thought that sounded disgusting! How maddening to have the meal ruined. Your enchilada recipe sounds truly redemptive though. I'm going to have to try that soon.
