Jack Johnson's Banana Pancakes...
Let's just replace the bananas for strawberries and instead of breakfast, let's make it dinner. Oh forget it, I just like the song.
1 1/2 cups all- purpose flour
2 teaspoons baking powder
1 teaspoons sugar
1/2 teaspoon salt
1 1/4 cups milk
3 tablespoons of malted milk
3 tablespoons shortening, melted (I've used butter, and didn't see a difference)
strawberries, washed and finely diced
Combine milk and malted milk until malted milk is dissolved. Then combine flour, baking powder, sugar, salt. Add all other ingredients and blend until smooth.
When your pancakes are in the pan and bubbles are starting to form on the edges and surface, add some of the finely chopped strawberries. Flip and cook until golden brown. Serve with powdered sugar and more strawberries on top. The little sous chefs love maple syrup on their pancakes. Nothing like getting your kids all hopped up on sugar before bed.
If you have a pre-made pancake mix, same thing. If you can find Carbon's Golden Malted Original Pancake and Waffle Flour Mix, don't even bother making my mix, buy the Carbon's. It's that good.
