Snacktime! and some link love

Since I've given you some recipes for guacamole, let's take this a step further. Let's make sopes (sorta)! Rick Bayless calls sopes little corn masa boats, I call them small thick corn tortillas and Free Translation.com calls them "you dip". You say tomato, I say tomahto! They're good and that's all that matters.

Okay, I'm going to admit this, I haven't made sopes from scratch. Yes, I'm a bad person! It's easier for me to buy the fresh ones at the store and fry them up. If you want a recipe for sopes email me and I will send it to you because I do have one it's just waiting in line with all the other recipes I haven't made yet.

The magical thing about sopes is that you can dress them up or dress them down. Add some beans cooked with chorizo. Some left over shredded chicken would be good. For this picture, I made guacamole and added some grated sharp cheddar cheese, chopped tomato, green onion, cilantro, and crema fresca. If you can't find crema fresca use sour cream.
Last night we ate these for dinner, it was going to be you're the chef night but somehow the kids talked me into making these. Foiled again!

Even though you haven't made sopas can you recommend a recipe? Spousal Unit is a S Cal boy and I would like to make a special dinner for him later this month. Its our 29th anniversary and what that boy won't do for a Mexican dinner.
